Ingredients

Cake Batter

1 cup vegetable oil

3 eggs

2 cups granulated sugar

2 cups flour

1 tsp salt

1 tsp cinnamon

2 tsp baking soda

1 tsp vanilla

2 cups dessicated coconut

1 cup raisins

2 cups grated carrots

1 cup crushed pineapple with

juice

Cream Cheese Frosting

4 oz cream cheese (softened)

4 oz butter or margarine (softened)

1/2 pound Icing Sugar

1 tsp vanilla

Preparation

Cream together the first 8 ingredients, mix until light & fluffy. Stir in the coconut, raisins, grated carrots, & pineapple. Pour into greased or lined pans. Bake in 350 degree oven for 50 minutes or until a toothpick comes out clean. Remove from pans(s) when sligtly cool, allow to completely cool before topping with Cream Cheese Frosting: Cream all frosting ingredients together & beat until Light & Fluffy. Spread on Cake. Decorate as desired.
