Ingredients
1 c sugar
1 c brown sugar
1 c oil
1/2 c buttermilk
2 c flour
2 ts baking powder
2 ts baking soda
1 ts salt
1 ts cinnamon
1/2 ts nutmeg
1/2 ts ginger
3 c grated carrot
1 c grated apple
1/2 c pecans chopped
1 tb grated orange peel
4 la eggs
2 8 cream cheese
1 st butter (unsalted)
2 ts vanilla extract
1 ts orange extract
2 ts grated orange peel
4-5 c powdered sugar
Preparation
325F. Grease either 3 9"cake pans or 1 13x9x2. Line with wax paper and butter. Beat oil with sugars and add 1 egg at a time. Add buttermilk and orange zest. Sift dry ingredients and add to egg mixture. Add carrots, apple and nuts. bake about 55 mins.
Frosting:
Beat cream cheese with butter in bowl. Add orange peel. Add sugar and beat until smooth.
Note: Half the frosting is enough to top the rectangle. May need more icing sugar for proper consistency.
