Ingredients
4 eggs
2 cups white sugar
1 1/2 cups oil
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt (opt.)
4 cups grated carrots
1 cup chopped nuts
Frosting:
2 1/2 cups powdered sugar
4 ounces cream cheese
1/2 cup margarine or butter
1 teaspoon vanilla
Preparation
Beat 4 eggs well. Then add sugar and oil and beat until creamy. Next add dry ingredients (flour, cinnamon, soda, baking powder and salt) and stir. Then stir in carrots and nuts. Beat for 4 minutes with a mixer. Put in a greased and floured 9/13 pan for 1 hour at 325 degrees.
Let cake cool completely. Then beat all frosting ingredients together and frost cake.
