Ingredients

-3 cups shredded carrots

-2 cups flour

-2 cups sugar

-1 cup oil

-3 eggs

-1 teaspoon vanilla

-1 teaspoon baking powder

-1 teaspoon baking soda

-1 teaspoon cinnamon

-1 teaspoon salt

a dash of fresh ground nutmeg

-a dash of fresh ground ginger

For frosting:

1 package cream cheese

1 teaspoon milk

1 teaspoon vanilla

2 or 2 1/4 powdered sugar or up to your taste.

Blend Frost and Bon Appetite :-)

Preparation

Shred the carrots-put aside Blend the eggs sugar and vanilla in the blender ( same one you shredded the carrots in,,just rinse it ) until very light, around 5 minutes. Add the flour and spices to the shredded carrots then add the oil , and mix just till blended ( do not over mix). Put in two 9 inch pans ( that are buttered and floured) Bake around 25 minutes
