Ingredients
Cake:
2 cups sugar
2 cups flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
4 eggs, beaten
1 1/2 cups cooking oil
3 cups raw shredded carrots
Frosting:
3 to 4 ounces cream cheese
1/2 cube (1/4 cup) margarine
1/2 to 1 pound powdered sugar
1/2 cup chopped nuts
1 tsp vanilla
Preparation
Cake: Combine dry ingredients (sugar through salt). Add remainder of ingredients. Bake at 350 for 30 to 50 minutes.
Frosting: Mix together and spread. Makes enough to frost the top of rectangle cake in pan.
