Ingredients

3 C. Flour

1 t. Soda

1 t. Baking Powder

1/4 t. Salt

2 t. Cinnamon

2 C. Sugar

3/4 C. Vegetable Oil

4 Eggs

2 lbs Carrots

Frosting:

8 oz Cream Cheese

1 lb Powdered Sugar

1 stick Butter

2 t. Vanilla

1/2 C. Chopped Pecans (optional)

Preparation

Preheat oven to 375 degrees. Mix dry ingredients. Add oil and blend. Add eggs, one at a time and beat between each addition. Add carrots and blend well. Bake for 1 hour in well greased tube pan or 45 minutes in greased flat pan.

Frosting: Bring cream cheese and butter to room temperature. Beat until smooth. Add powdered sugar and beat until fluffy. Add vanilla and nuts. Frost cake and refrigerate.
