Ingredients

2 C sugar

4 lg eggs room temp

1 T vanilla extract

1 1/6 c vegetable oil

2 C flour

2 tsp baking soda

2 tsp baking powder

2 tsp cinnamon

1 tsp salt

3 c grated carrots

1 c chopped toasted walnuts

Cream Cheese Frosting

1 c unsalted butter

1 16 oz cream cheese softened

2 tsp vanilla extract

Preparation

Preheat oven 325. Spray three nine inch cake pans with vegetable spray. then lay parchment circles into bottom of pans. In an electric mixer, beat sugar, eggs, vanilla until thickened. Stir in oil. Sift together dry ingredients, then blend into egg mixture. Stir in carrots and walnuts.

Bake for 35-40 min, rotating pans halfway through.

Frosting: Blend together all ingredients until no lumps remain. Chill one hour before frosting.
