Ingredients

3 C. flour

1 tsp. baking powder

1 tsp. baking soda

3 1/2 tsp. cinnamon

1/2 tsp. salt

1 3/4 C. sugar

1 1/3 C. salad oil

4 eggs

2 tsp. vanilla

2 C. grated carrots

1 C. chopped nuts, (walnuts or pecans)

Preparation

Mix dry ingredients. Set aside. Beat sugar and salad oil. Add eggs beating after each addition. Add vanilla grated carrots, and nuts. Add dry ingredients and mix on medium speed (2 min.) until combined. Place in 2 (9 inch round) or Bundt pan. Bake 350 degrees for 35 min. or until done. (Can take up to 1 hour depending on the size of pan.) Frost when cake is cool.
