Ingredients
Cake:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1-1/2 cups oil
2 cups sugar
4 eggs
3 cups grated carrots
1 teaspoon vanilla
Frosting:
1/2 cup butter
1/2 pound powdered sugar
4 ounces cream cheese
1 teaspoon vanilla
1/2 cups walnut or pecans, chopped and toasted (optional)
Preparation
Cake: In a medium bowl combine flour, baking soda, baking powder, salt and cinnamon. Set aside. In a large mixing bowl combine oil, sugar and eggs. Mix well. Add dry ingredients and stir until mixed completely. Add carrots and vanilla and stir to combine well.
Spread in a 9X13 pan and bake at 350 degrees for 45-60 minutes. Let cool completely.
Frosting: In a medium bowl blend butter, sugar, cream cheese and vanilla until smooth. Stir in nuts if desired.
Spread evenly over cooled cake.
