Ingredients
Cake
2 cups sugar
4 eggs
2 tsp. baking soda
1 pkg. pecans
1 1/2 cups vegetable oil
2 cups flour
2 tsp. cinnamon
2 1/2 cups of shredded carrots (about 4)
Icing
1 lb. powdered sugar
1 stick butter (softened)
1 8oz. pkg. cream cheese(softened)
Preparation
Preheat oven to 350 degrees. Mix sugar, oil and eggs, then add dry ingreds. Fold in Carrots and Nuts. Pour into greased bundt pan and bake for 40-45 mins.
Cream icing ingredients together and spread over cooled cake.
