Ingredients
3 C.grated carrots
1 1/2 C.salad oil
2 C.sugar
1/2 C.chopped pecans
4 eggs
2 C.plain flour
2 tsp.soda
2 tsp.baking powder
1 tsp.salt
2 tsp.cinnamon
ICING
1 8-oz. pkg cream cheese
1 stick butter, melted
1 box sifted confectioners’ sugar
1 C.chopped pecans
2 tsp.Vanilla
Preparation
Mix together carrots, salad oil, sugar and pecans. Add eggs, one at a time, beating well after each addition. Add gradually flour, soda, baking powder, salt and cinnamon, which have been sifted together. Bake in 3 well-greased and floured pans at 350 degrees for about 1 hour or until done. Icing Mix together and spread between layers and on top of cake.
