Ingredients
1 1/4 cup corn oil
2 cups sugar
3 eggs
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
1 cup raisins
1/2 cup crushed, drained pineapple
1 cup chopped nuts
2 cups flour
3 cups shredded carrots
1 teaspoon salt
Frosting:
1 stick butter
1 1/4 cup confectioners sugar
drained pineapple
8 ounces cream cheese
1/4 to 1/2 cup crushed
1/4 to 1/2 cup chopped walnuts
Preparation
Preheat oven to 350 degrees
Soak raisins for 20 minutes in boiling water and drain. Butter 9x13 inch pan or tube pan. In large bowl, combine all ingredients for cake. Pour into prepared pan. Bake 45 minutes to 1 hour until cake test done.
For Frosting:
Cream butter, cream cheese and sugar until light and fluffy. Mix in pineapple and walnuts. Cool cake before frosting.
