Ingredients

2 c. flour

2 c. sugar

2 tsp soda

1 tsp walt

2 tsp cinnamon

4 eggs

1 c. oil

4 c. (8) grated carrots

1/2 c. chopped pecans

Preparation

Stir together flour, soda, salt, sugar and cinnamon. In large bowl, beat eggs till frothy; slowly beat in oil. Gradually add flour until smooth. Mix in carrots and nuts. Pour into 3 8" round pans. Bake at 350 for 25-30 min. Cool 10 min and remove.

Frosting - Blend 4 tbsp marg and 6 oz. soft cream cheese. Gradually add 4 1/3 c. sifted powdered sugar. Beat until light, smooth and creamy. Stir in 1 tsp vanilla and 1 tsp. maple flavoring.
