Ingredients
Cake:
4 Eggs
3/4 C. Vegetable or Canola Oil
1/2 C. Unsweetened Applesauce
1 C. Granulated Sugar
1 C. Brown Sugar
1 Tbsp. Vanilla Extract
2 C. All Purpose Flour
2 tsp. Baking Powder
2 tsp. Baking Soda
1/2 tsp. Salt
1 Tbsp. Cinnamon
1/4 tsp. nutmeg
3 C. Grated Carrots
Frosting:
1/2 C. Butter, Softened
8 oz. Cream Cheese
3-4 C. Powdered Sugar
1 tsp. vanilla extract
Preparation
Cake: Preheat Oven to 350 degrees. Grease and four two 9" round cake pans.
Mix dry ingredients in a mediu bowl with a wisk. Beat wet ingredients together. Add carrots to the dry mixture and toss to coat. Mix dry mixture into wet mixture. Pour into prepared pans.
Bake 40-50 minutes or until a toothpick comes out clean. Cool 10 minutes in the pans then turn out onto a rack to cool completely.
Frosting: Beat butter, cream cheese and vanilla in a mixer until combined. Add powdered sugar one cup at a time until desired sweetness. Chill before using.
