Ingredients

3 eggs

1 1/4 c. oil

2 teaspoons vanilla

2 c. sugar

3 c. flour

2 t. baking soda

2 t. baking powder

2 t. cinnamon

1/2 t. salt

1/2 c. chopped pecans

1/2 c. raisins

1/2 c. coconut

2 c. grated carrots

1 8 oz. can crushed pineapple

Preparation

Combine eggs, oil, vanilla and juice from pineapple.. Mix well. Beat in sugar until creamy. Sift in flour, cinnamon, baking powder, baking soda and salt. Beat on high for 3 minutes. Stir in pineapple.carrots.raisins. coconut and pecans. Pour into prepared bundt pan. Bake 60 minutes or until cake tests done. Cool and frost with Raisin-Nut Cream cheese frosting.
