Ingredients

Cake:

2 C flour

2 C sugar

1 t baking powder

1 t soda

1 t cinnamon

1 t salt

1 C oil

4 large eggs

3 C grated carrots

1 t vanilla

Frosting:

8 oz pkg. cream cheese

1/4 C butter

1 t vanilla

2 1/2 C icing sugar

Preparation

Grease and flour a 10 inch Bundt Pan. In a large bowl stir together flour, sugar, baking powder, soda, cinnamon and salt. Add oil, eggs, grated carrots and vanilla. Mix just until dry ingredients are moistened. Pour into prepared pan and bake in centre of 325 oven for 60-65 minutes.

Frosting:

Mix together cream cheese, butter and vanilla. Add icing sugar and mix until smooth. Spread over cooled cake.
