Ingredients

Carrot Cake

2 cups sugar

1 1/2 cups oil

4 eggs

2 tsp cinnamon

1 tsp salt

1 tsp vanilla

3 tsp baking soda

2 1/4 cups flour

3 cups grated carrots

1 1/2 cups chopped walnuts

Cream Cheese Frosting

8oz soft cream cheese

2 tsp vanilla

1/4 cup butter

1 1/2 cup confectionery sugar

Preparation

Preheat oven to 300 In a large mixing bowl add the first three ingredients and beat for 2 minutes. Mix in cinnamon, salt, vanilla and baking soda stirring well before adding the flour. Fold in carrots and walnuts. Pour batter into a 13x9 inch baking dish. Bake 1 hour at 300 degrees.

Cream Cheese Frosting Blend all of the ingredients well and frost the cake once it has cooled to touch.
