Ingredients

2 Cups All-Purpose Flour

2 Cups Sugar

1 Teaspoon baking powder

1 Teaspoon Ground Cinnamon

1 Teaspoon Baking Soda

1 Teaspoon Salt

3 Cups Finely Shredded Carrots

1 Cup Cooking Oil

4 Eggs

Preparation

Pre-Heat Oven 325

Lightly Grease and flour 13X9X2 baking pan. In a Mixing bowl combine Flour, Sugar, baking powder, baking soda, salt and cinnamon. Add Carrots cooking oil and eggs and beat with electric mixer 2-3 minutes. Pour into pan and bake for 50-60 minutes allow to cool then frost with cream cheese frosting. Cream Cheese frosting:

1 13oz pk Cream Cheese

¼ Cup Butter

1 Tsp Vanilla

2 Cups sifted powderd icing sugar.

Beat cream cheese, butter and vanilla till light and fluffy. Gruadually add powered sugar, and beat till smooth.
