Ingredients

3 cups flour

3 cups sugar

1 tsp salt

1 tbsp baking soda

1 tbsp ground cinnamon

1 ½ cups corn oil

4 large eggs, lightly beaten

1 tbsp vanilla

1 ½ cups chopped walnuts

1 ½ cups shredded coconut

1 1/3 cups pureed cooked carrots (use full 1 lb package)

¾ cup drained crushed pineapple

cream cheese frosting

Preparation

Preheat oven to 350º. Grease 2 9" layer cake pans, lined with wax paper.

Sift dry ingredients into a bowl. Add oil, eggs, and vanilla. Beat well. Fold in walnuts, coconut, carrots, and pineapple.

Pour batter into prepared pans. Bake 30-35 min, until edges have pulled away from the sides and a toothpick comes out clean. Cool on rack. Frost with cream cheese frosting.
