Ingredients

3 Eggs.

1 Cup caster sugar.

3/4 Cup cooing oil(veg).

2 Teaspoons cinnamon.

2 Cups grated carrot.

1 Teaspoon bi-carbonate of soda.

1 Teaspoon baking powder.

1 Lemon.

1/2 Cup of pecan kernels.

1 1/3 Cups of plane flour.

Cream cheese.

Preparation

1 Beat eggs and sugar until frothy. 2. Add oil and cinnamon. 3. Grate carrot add to mixture. 4. Add sifted flour,bi-carbonate of soda and baking powder. 5. Mix well pour into cake tin. 6. Bake in a hot oven(180 degrees)for 1 hour. 7. When the cake is cool add lemon juice to cream cheese mix well. 8. Spread cheese on the of cake and decorate with pecans.
