Ingredients
4 eggs
1 1/2 c. oil
2 c. sugar
2 c. all-purpose flour
2 t. cinnamon
2 t baking soda
1 t. salt
1 # carrots, peeled and grated
Icing:
8 oz. cream cheese
1/2 stick butter
1 box powdered sugar
1 c. pecan pieces
2 t. vanilla
Preparation
Combine eggs, oil, & sugar. Mix well.
Sift together flour, cinnamon, baking soda, and salt. Add to egg mixture, blend well.
Add carrots and mix.
Grease and line 2 9" cake pans. Pour batter.
Bake at 350 45-50 minutes, or until tester is clean.
Cool in pan 10 minutes, then on rack. Ice.
