Ingredients
1 1/2 cups all purpose Flour
1 1/2 cups Granulated Sugar
1 teaspoon Baking Powder
1 teaspoon Salt
1/2 teaspoon Baking Soda
1/2 teaspoon ground Cinnamon
1/2 teaspoon ground Ginger
1/2 teaspoon Nutmeg
1 cup shredded Carrots
3/4 cup Vegetable Oil
8.5 oz. can crushed Pineapple (drained)
3 Eggs
1 Tablespoon hot Water
1/2 cup chopped Walnuts or Pecans
1/4 cup Golden Raisins
Preparation
Mix flour, sugar, baking powder, salt, baking soda, cinnamon, ginger and nutmeg in a large bowl. Combine carrots, oil, pineapple, eggs, and water; stir into dry ingredients, mixing until smooth. Stir in nuts and raisins. Pour into prepared 9-inch cake pan. Bake at 350 for 45 minutes or until cake springs back when lightly touched. Remove from pan and completely cool before icing with cream chees icing.
