Ingredients
1 c. grated carrot (about 3 medium carrots, peeled)
3 tsp. grated ginger or 1 tsp ground ginger
1 c. brown sugar
1/2 c. vegetable oil
1/4 c. applesauce
3 T soy milk or water
2 tsp flax seed, optional
1 1/2 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 tsp. vanilla extract
Preparation
Preheat oven to 350 degrees.
In a medium bowl, sift flour and spices, being careful to sift the baking powder to avoid clumps.
Mix wet ingredients, flax seed and grated ginger in a large bowl with a whisk. Add sugar and continue to mix.
Gradually add dry ingredients until mixture is smooth. It will seem a bit dry. Mix in grated carrot (it will now have a much smoother, more moist consistency) and pour into 2 greased mini-loaf pans and bake for 30-40 minutes, or until top has risen and browned and toothpick or knife stuck in the middle of the loaf comes out clean.
