Ingredients

Caribbean Rub

1 lb. Brown sugar

3 T cumin

1.5 T salt

1.5T ground black pepper

1.5 T ground cloves

1/3 C chili powder

1.5 T garlic powder

1 t white pepper

1 t crushed red chilis

1 t ground nutmeg

4 # pork tenderloin

2 C ripe fresh mango, puréed

Preparation

Throughly combine all the spices. Rub the pork with the rub. Make sure that it is well coated. Smoke or grill until an internal temperature of 150° is reached. Glaze with the mango puree and heat a few more minutes. Slice and serve.
