Ingredients

2 ½ cup flour

¼ cup sugar (plus extra sugar for tops)

4 tsp baking powder

¼ tsp salt

2/3 cup margarine at room temperature

2/3 cup milk

2 eggs

Preparation

Mix dry ingredients in bowl Cut in butter until mixture resembles coarse meal

Combine milk, 1 whole egg and 1 egg yolk in small bowl (save egg white) Mix both bowls together until moistened

Turnout on lightly floured board and knead several times Form into ball and divide in half Pat each half into 6-8in circles Cut each circle in 6-8 wedges

Beat remaining egg white and brush tops of scones Sprinkle generously with extra sugar

Bake in preheated oven at 400 degrees for 18-20 min until golden and springy to the touch

Extras: Orange Raisin - mix grated orange peel and 1cup raisins. Replace 1/3cup of milk with OJ Almond Scones - add 1cup sliced almonds and 1tsp almond extract Cranberry Walnut - 1/2cup dried cranberries and 1/2cup nuts Cherry Pecan - 1/2cup dried cherries and 1/2cup nuts Mocha Chocolate Chip - add several teaspoons of instant coffee to milk and 1cup mini chocolate chips Blueberry - 1cup dried blueberry Cranberry Orange - same as orange raisin suggestion
