Ingredients
1 1/2 lbs of chicken
2 cans of pineapple chunks
1/4 cup brown sugar
2 tbsp cornstarch
1/4 cup vinegar
2 to 3 tbsp soy sauce
1/2 tsp salt
1 thinly sliced green pepper
1 large, thinly sliced onion
2-3 tbsp of olive oil.
Preparation
Sauce: Combine juice from pineapple chunks, brown sugar, cornstarch, vinegar, soy sauce, and salt with green pepper and onion. Set aside. Cut up chicken into bite size pieces and fry 2-3 tbsp of olive oil in a large skillet. (add a couple tbsp of water to keep chicken moist.) When chicken fully cooked, add sauce mix and cook until bubbly and thickened. Add pineapple chunks. Serve over brown rice.
