Ingredients
4 cups all-purpose Flour
2 cups sugar
2 teaspoons cinnamon
2 teaspoons baking soda
1 can pumpkin (16 ounce)
1 cup vegetable oil
2 eggs (or 2 tbs flax meal and 6 tbs water mixed together)
2 tablespoons milk
2 teaspoons vanilla extract
2 cups carob or chocolate chips
1 cup walnuts (optional)
Preparation
Preheat oven at 375 degrees. In a mixing bowl, combine flour, sugar, cinnamon, baking soda, and salt. Add pumpkin, oil, eggs, milk, and vanilla; beat on medium speed until well mixed. Stir in carob chips and nuts. Drop by tablespoons onto greased cookies sheets. Bake for 13-14 minutes or until edges just begin to brown. Put on wire rack to cool.
