Seasoning: Mix 1 tsp each adjust to taste

alllspice

onion powder

garlic powder

cinnamon (3/4 tsp)

nutmeg (1/2 tsp)

cayanne pepper (optional - to taste)

Boneless pork loin (fillet) (2lb)

dried apricots

Preparation

prepare spice mix slit pork loin in top forming pockets approximately 1 inch apart lengthwise down the loin. Stuff apricot into each slit. Sprinkle spice mixture on surface moderately bake at 350 F for approximately 40 minutes until done
