Ingredients

1/3 cup olive oil

3 green cardamon pods

3 dried red chilis

1 Tbs coriander seeds

1 tsp cumin seed

1/2 tsp whole peppercorns

salt

1 head cauliflower in florets

1 medium red onion, halved and thinly sliced

Preparation

  1. Preheat oven to 425. Brush 9 by 13 pan with olive oil.
  2. Grind spices in coffee grinder. Mix with olive oil in large bowl. Add cauliflower and onions and toss.
  3. Bake until tender. Start checking in 30 minutes.
