Ingredients

2 medium red onions

2 tablespoons olive oil

1 tablespoon butter

6 eggs

¾ cup whole milk

1 tablespoon grated Parmesan

1 tablespoon fresh ground parsley

1 link pork chorizo, sautéed

Salt and pepper to taste

Preparation

  1. Peel the onions and slice into ½ inch thick rounds.
  2. Heat the butter and olive oil in a 10 inch skillet over medium-high heat. Add the onions and cook until they become golden. Shake the pan from time to time to cook evenly.
  3. Lightly beat the eggs, then pour in the milk, cheese, parsley and crumbled chorizo. Season with salt and pepper.
  4. When the onions are cooked, turn the heat down to medium. Pour the mixture over the cooked onions. Stir gently to incorporate, then cook for to 8 minutes until the bottom is set.
  5. To finish cooking, you may set the pan under the broiler until the top is just done. The eggs should not cook dry.
