Ingredients

1 1/2 cups sugar

1/4 cup water

1 1/2 t. lemon juice

1 cup whipping cream

2 T. butter, unsalted and at room temp

Preparation

Combine sugar, water and lemon juice in heavy saucepan and put over low to medium heat until sugar dissolves.

Crank up the temp to high and boil–no stirring—until mixture turns a deep amber color (about 7 minutes). Remove from heat and add cream (it will boil vigorously).

Return to low heat and stir until all dissolves into a creamy texture. Add butter and whisk until smooth and blended. Let cool.

Can be made in advance. Not sure how long it keeps as it is usually gone within a day!!!
