Ingredients
4 c. peeled & thinly sliced baking apples, McIntosh preferred
2 c. sugar
2 c. flour
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 eggs
3/4 c. oil
2 tsp. vanilla
1/4 c. butter, melted
1/2 c. brown sugar
2 tbsp. milk
1 1/2 to 1 3/4 c. sifted powdered sugar
Preparation
Stir together apples and sugar, mixing well. Mix dry ingredients separately and add to the apple mixture. Beat oil, eggs and vanilla in a small bowl and add to the apple mixture. Bake in greased 9 x 13 inch pan at 350 degrees for about 45 minutes or until cake is done. Do not overbake, cake should be very moist.For the frosting combine butter and brown sugar in a saucepan. Boil and stir for 1 minute or until slightly thickened. Cool slightly. Add milk and beat until smooth. Add powdered sugar and beat to spreading consistency.
