Ingredients

1 15oz. can cannellini/white kidney beans

3 tbsp. finely chopped red onion

1/2 tsp. chopped thyme

1/2 tsp. chopped rosemary

1 tsp. chopped flat leaf parsley

1/2 tsp. salt

1/4 tsp. ground pepper

36 small white button mushrooms, stemmed

olive oil

Preparation

1.Preheat broiler. Mash beans into a course puree. Mix in onion, thyme, rosemary, parsley, 1/4 tsp. salt and 1/4 tsp. pepper. 2. Scoop out some of mushroom cap from bottom. Brush with oil; place on baking sheet, trimmed side up. Sprinkle with salt and pepper. 3. Fill with 1 1/2 tsp. of mixture. Broil until tender and brown. About 4 minutes.
