Ingredients
1 can (19 oz) of Cannellini beans (white kidney beans) drained
4 cups of sliced Portobello mushrooms
2 tb spoons of olive oil
1/2 cup of feta cheese
4 garlic cloves minced
Black pepper
Crushed dry red pepper (optional)
Salt
Preparation
Heat the olive oil in a pan set over medium heat. Add minced garlic and saute for 2 min. Add sliced mushrooms and stir occasionally for about 5 min. Add beans and cook for 5 min. Add salt and black pepper to taste, and crushed dry red pepper (optional). Serve in bowls and sprinkle with feta cheese.
