Ingredients

1 cup dried cannelini beans

carrot

onion

garlic

fresh red chillis

vegetable stock

fresh parsley

Preparation

Soak beans for 12 hours Pressure cook the beans for around 10 minutes (using a pressure cooker seems to cook the beans vs boiling) Drain the cooked beans Saute the chopped carrot, onion, garlic and red chilli. Add the cannelini beans and vegetable stock. (I cheat and use a stock cube) Simmer for half an hour. Stir in chopped parsley briefly before serving.
