Ingredients
2 1/4 cups oat bran cereal
1 tablespoon baking powder
1/4 cup raisins
2 tablespoons vegetable oil
1 cup evaporated skim milk
2 egg whites
1 16 ounce can fruit
Preparation
Preheat oven to 425 degrees. Mix dry ingredients in a bowl. Mix together all other ingredients ecept the fruit. Add the liquid mixture to the dry ingredients and mix. Chop the canned fruit and add to the batter. If the batter seems dry, add a bit of the fluid drained from the fruit. Line the muffin pan with paper baking cups and fill with batter. Bake for 17 minutes or until a toothpick comes out clean.
