Ingredients

4-5 lbs Fresh Sweet Potatoes or Yams, peeled and sliced to 1/4 in thick

1 stick butter

1 cup real maple syrup

1 cup Jim Beam bourbon

Preparation

Preheat oven @ 325 degrees. Place sliced sweet potatoes in large baking dish or lasagna pan so there are only two layers of sweet potato slices. In a non-stick 2-quart sauce pans, melt the butter, slowly pour in the maple syrup (stirring constantly), and then add the Jim Beam, stirring until totally combined. Simmer until vigorously bubbling. Pour sauce over sweet potatoes. Bake sweet potatoes for 1 1/2 hr, turning slices every 1/2 hour. Drippings in roasting pan can be used in a gravy to carry over the bourbon flavor.
