Ingredients

1 large egg white 

2 tablespoons Angostura bitters 

1/2 cup sugar 

2 teaspoons kosher salt (we use Diamond Crystal) 

3/4 teaspoon freshly ground pepper 

1/2 teaspoon ground cinnamon 

4 cups mixed nuts, such as almonds, cashews, and walnuts 

Preparation

Preheat oven to 275°F. Whisk egg white with bitters in a bowl until frothy. Whisk in sugar, salt, pepper, and cinnamon; stir in nuts and toss to coat.

Spread in an even layer on a parchment-lined baking sheet. Bake, stirring occasionally, until golden and crystallized, 45 to 60 minutes. Let cool completely. Store in an airtight container at room temperature up to 1 week.
