Preparation
Preheat oven 500 degrees Trim heavy fat and tail off roast Weigh meat precisely. Rub meat down with seasonings I like to roll and tie roast.
Place on rack in 500 degree oven for exactly 5 minutes per pound,adjust for partial pounds i.e. 1/2 pound is 2 1/2 minutes. When the calculated time is up cut off the heat and don’t open the oven door for two hours. It should come out rare to medium rare.
