Ingredients

1 lb Campanelli noodles

8 oz Goat Cheese, crumbled

4 cloves garlic, minced

1 small shallot, chopped

4 medium tomatoes, chopped

Fresh Basil

Olive Oil

Salt & Pepper

Preparation

Put garlic and shallots in large pan and cook under medium heat until garlic browns and shallots become slightly carmelized. Add tomatoes and fresh basil and simmer until tomatoes are very soft and soupy. In medium pot, boil salted water and add campanelli. Cook al dente, drain, return to pot. Add tomatoe sauce mix and goat cheese. Season to taste with S&P, stir ingredients together, and serve.
