Ingredients

RUB:

3 shallots, chopped

2 bay leaves, crumbled

1-1/2 tsp salt

3/4 tsp allspice

3/4 tsp fresh ginger, crushed

dash black pepper

MEAT: 2 X 3/4 lb pork tenderloins

SAUCE:

1-1/2 c orange juice

1/4 c shallots, minced

3 tbs brown sugar

2 tbs fresh ginger

2 bay leaves

3/8 tsp allspice

dash ground black pepper

Preparation

Preheat to 450. Combine RUB ingredients and rub into pork loins. Roast abou 25 minutes until inside temp = 150. Meanwhile, combine sauce ingredients and simmer until slightly syruppy, about 10 minutes. Place cooked pork on serving platter and pour sauce on top.
