Ingredients
Dressing:
1 clove garlic, finely minced
1 tsp. Dijon mustard
1 T. balsamic vinegar
Juice of 1 freshly squeezed orange (6 T.)
Salad:
3 C. mixed greens
8 oz. boneless, skinless chicken breast, grilled and sliced
1 tart spple. quartered and sliced
1/2 C. blue cheese, crumbled
1/2 C. shelled pistachios
Preparation
For the dressing, mix together the ingredients with a wire whisk. Set aside to mellow flavors while you make the salad. Wash and dry the greens and divide among four salad plates. Divide chicken, apple slices, blue cheese and pistachios over salad. Drizzle dressing over each.
