Ingredients
1 15 oz. can corned beef hash
2 tbsp virgin olive oil
4 medium size russet potatoes par- boiled or 1/2 baked
1 medium yellow onion diced
1 cup spicy bloody mary mix
1 tsp. fresh ground black pepper
1/2 cup diced left-over roasted or boiled corn beef ( optional)
Preparation
pre-heat oven to 350 in cast iron skillet saute onion with black pepper in oil. remove and set aside saute potatoes until light golden add hash and onions add left-over beef add bloody mary mix simmer for 15 minutes bake for 15 minutes
