Ingredients

Dressing:

1 T garlic puree

1/2 c olive oil

1 T sherry vinegar

1/4 t salt

1/4 t pepper

Grain mixture:

1 pkt Kashi multigain pilaf

1 oz carrots, finely chopped

4 oz chopped bell peppers

1 oz zucchini, finely chopped

1.5 oz celery, finely chopped

1 T minced shallot

1 T chopped Italian parsley

1/2 T choped tarragon

Preparation

Prepare Kashi as label directs. Just before cooking time is up, add chopped carrots to blanch until just tender (2 min)

Drain mixture, then rinse with cold water. Add rest of ingreds and toss to combine.
