Ingredients
1 pound squid cut in 1/2 inch pieces.
1/4 cup extra virgin olive oil
4 cloves garlic minced
3 anchovy fillets
1/2 cup oil cured Sundried tomatoes diced.
1/4 tsp red pepper flakes
2 tbsp minced fresh basil
1/4 cup chicken stock
1/2 pound linguine cooked
Preparation
Heat olive oil gently in skillet. Add garlic,tomatoes, anchovies and red pepper flakes. Saute until garlic is translucent and anchovies are dissolved. Add basil,chicken stock and squid. At medium high heat cook 4 to 6 minutes until squid is opaque. Serve over cooked linguine with good Italian bread and a green salad.
