Ingredients

3 large eggs

3 large egg yolks

pinch of salt

3/4 cup of sugar

1/3 cup cake flour

1/3 cup corn starch

1/4 cup dutch processed cocoa

Preparation

Preheat oven to 400. Butter a 10x15 jelly roll pan and line it with buttered parchment.

Whisk together eggs, sugar, yolks and salt. Set over simmering water until just lukewarm (100 degrees). Move to mixer and whip until cool and tripled in volume.

Stir flour, corn starch and cocoa together. Sift 1/3 of the mixture over the eggs and fold in. Repeat with remaining thirds. Spread batter gently into pan and bake for 10 - 12 minutes until just firm. DO NOT OVERCOOK!
