Ingredients
Crust:
1 cup flour
1/2 cup butter
Filling:
2 beaten eggs
1 1/2 cup brown sugar
1/2 cup grated coconut
1/2 teaspoon salt
1 cup chopped pecans
2 Tablespoons flour
1/2 teaspoon baking powder
1 teaspoon vanilla
Icing:
1/2 cup confectioner sugar
lemon juice
Preparation
Mix crust ingredients until they form a paste. PRess into a 9 x 12 pan. Bake 350 for 25 minutes. Mix filling ingredients in order, mixing after each addition. Pour onto crust Bake 45 min or until golden crust. Icing: Add lemon juice to sugar until spreading consistency. Cool then cut.
