Ingredients
Sauce:
1/4 cup sun dried tomatoes, softened in water in microwave
2 cloves garlic, minced
2-3 sprigs finely chopped rosemary
1/4 cup red wine
8 oz. tomato sauce
Salt & Pepper to taste
Salmon:
4 salmon filet, 5-6 oz. each
1 TBS. olive oil
1 tsp. butter
Blackening seasoning
Preparation
Sauce: In mini chopper,puree sun dried tomatoes with the rest of ingredients. Bring to boil, then simmer in small sauce pan for flavors to meld while salmon cooks. Salmon: Melt oil & butter together in microwave. Brush both sides of fish. Broil, presentation side down, about 3 min. Turn and sprinkle with blackening seasoning. Broil an additional 3 min. or until desired doneness. Top with sauce.
