Ingredients

3/4 cup uncooked long grain white rice

2 cups of water

1 cup of thick style salsa

8 ounces smoked sausage or kielbasa

1 16 ounce can of Black-eyed peas, drained

1 cup of whole kernel corn

2 dashes of ground red pepper

Preparation

Mix rice and water in a 4 quart saucepan and heat to boiling. Reduce heat, cover and simmer for 10 minutes, stirring occasionally. Stir in salsa, sausage, red pepper, peas and corn. Cook uncovered 10 minutes, stirring frequently until heated through.
