Ingredients

8 Large Prawns, cooked

1 Pound brown rice, cooked

2 Tbsp Oil

1/2 Cup Onion, Chopped

1 Each Green, Red, and Yellow Bell Pepper, Chopped

1/2 Cup Sunflower Seeds

1/2 Cup Peanuts

1 Tsp Pal Prudhomme’s Meat Magic Cajun Spice

1/2 Cup Ripe Olives, sliced

Sliced Lemon for Garnish

Sprigs of Fresh Parsley for Garnish

Preparation

Heat oil in a large skillet over medium heat. Add onions, peppers, seeds, and nuts. Cook for approximately 5 minutes, stirring occasionally. Add rice, cajun spices and olives. Stir to blend all ingredients. Continue to cook, stirring frequently, until rice is heated through.

Put rice mixture on a large flat platter. Arrange cooked and heated seafood on top and garnish with lemon slices and fresh parsley.
